Welcome cocktail • Savory cannolo filled with red tuna tartare marinated in Panarea gin, Sicilian blood oranges, capers, black olives and its bottarga. • Gallipoli purple prawn wrapped in XXL raw meat • Selection of premium meats from land and sea Sapori Solari (accompanied by pantomates) • Fried rice with raw Bra sausage and truffle • Octopus cooked at low temperature, lime-flavoured broad bean puree, Spilinga 'nduja sauce • Marinated red prawns on still Cremona pork cotechino with Castelluccio lentils • Artisanal panettone and Chantilly cream Sapori Solari • Midnight toast
