WELCOME GLASS

AMUSE BOUCHE Grilled polenta disc, Mangalica ossocollo and Port reduction.

APPETIZERS Carpaccio of Prussian beef, confit champignon mushrooms, Parmesan, honey mustard and Yuzu pearls. New Zealand venison tartare, flakes of marinated yolk, hazelnut ground and porcini mushroom reduction. Mini quiche of artichokes, pecorino romano and mint accompanied by mixed salad.

FIRST Guinea fowl ravioli, its base, 24 month old Vacche Rosse Parmesan cream and lemon thyme powder.

SECOND Grilled New Zealand venison fillet, blueberry coulis and cinnamon puree.

PRE DESSERT Sicilian almond granita with raspberry powder.

DESSERT Panettone or Pandoro plated with mascarpone cream and dark chocolate

MIDNIGHT Tasting of cotechino and lentils as per tradition GLASS OF CHAMPAGNE
